Zucchini Taco Boats

These Zucchini Taco Boats will have you enjoying taco night, minus the guilt.

Ingredients

1-2 lbs Ground Turkey or Chicken

1 Tablespoon Olive Oil

1 Bunch Chopped Green Onions

1 Package Taco Seasoning (I love La Tiara Taco Seasoning)

4 Zucchini

1 Cup Diced San Marzano Style Italian Tomatoes, Petite Dices

1 Heaping Tablespoon Chipotle in Adobo

1-2 Cups of Part-Skim Mozzarella Cheese, Shredded

Directions

PREP THE ZUCCHINI BOATS

Preheat oven to 425.

Cut each zucchini in half, lengthwise and place face down on a cookie sheet drizzled lightly with olive oil.

Sprinkle each boat with taco seasoning.

Place cookie sheet in oven and cook for 12 minutes.

After cooking, allow to cool slightly while you prepare the meat.

TACO MEAT STUFFING

Drizzle a small amount of olive oil in a skillet.

Add ground chicken or turkey.

Season with taco seasoning while browning the meat.

Once meat is browned, add diced tomatoes, green onions, and chipotle until all mixed together and cooked through. Check for flavor. If you need more taco seasoning, add it now.

ASSEMBLE THE BOATS

Fill each zucchini boat with a heaping amount of the meat mixture. Top each boat with cheese.

Place back into a 450 degree oven for about 10 minutes or until cheese is starting to turn golden and bubbly.
