When I’m cooking for a crowd, I love to make my Tequila Lime Chicken Enchiladas. They are easy to make, you can make a bunch at one time, and they are always a crowd pleaser. The best part is, they freeze easily, so make more than you need and you have a ready meal on a busy weeknight.
2 lbs skinless, boneless chicken breasts
1-1/2 sticks of butter, cubed
2, large sweet yellow onion
2 cans or 1/2 cup of roasted hatch green chiles, minced
1-2 blocks of softened cream cheese
1 lime, quartered
1/2 cup Mezcal tequila
10 count package of super soft homestyle flour tortillas
1-1/2 cups of Mexican blend shredded cheese
1/2 cup chives, chopped
1 cup heavy whipping cream
ENCHILADA SEASONING INGREDIENTS
1 tablespoon garlic powder
1 tablespoon onion powder
1/4 teaspoon cayenne pepper
1 tablespoon smoked paprika
1 tablespoon cumin
1 tablespoon chili powder
1 teaspoon kosher salt
1 teaspoon black pepper
Preheat oven to 350 degrees.
In a large casserole dish, add butter to the bottom of the pan and one chopped or minced onion. Place raw chicken breasts on top of the onion and butter. Generously sprinkle with enchilada seasoning. Top with the remaining onion and roasted hatch green chiles. Add lime wedges and tequila. Cover with foil and cook for 45-60 minutes or until chicken is cooked through.
After cooking, allow chicken to rest in the juices for approximately 20 minutes.
Remove chicken from pan (keeping the juice) and put in to a food processor to mince. Or, chop very fine. Once chopped, add to a large pot and start pulling apart the cream cheese and mix in stages on low heat until the cream cheese is melted. At this point, you can add in some of the juice from the pan to help the cream cheese come together with the chicken, if needed.
Once cream cheese is incorporated in the chicken mixture, it’s time to roll. Butter the bottom of a casserole dish. Scoop about 1 -2 tablespoons of the chicken mixture into a flour tortilla, roll, and place seam side down in the dish. Continue with others. You should be able to get 8-10 tortillas in one casserole dish.
Once all area rolled, top with cheese, chives, and heavy whipping cream. Place back in the oven on 350 for 20-30 minutes or until cheese is melted and whole dish is bubbly. Serve with a nice, green salad and you have a meal. LOVE YOUR LIFE! So good!
