Strawberry, Blueberry and Mango Salad

Last night I did a story about a salad I brought to a dinner party. To date, I think it has been the most requested recipe from you all. So, ask and you will receive. It’s so fresh and delicious and perfect for Spring and Summer.

Ingredients

SALAD INGREDIENTS

4 Cups Organic Spring Mix

1 Cup Strawberries, diced

1 Cup Blueberries

1 Mango, diced

1/2 Cup Feta Crumbles

1/2 Cup Roasted Walnuts or Pepitas


CITRUS VINAIGRETTE INGREDIENTS

1 Shallot, finely diced

1 Clove Garlic, minced

Juice and Zest from 1 Orange

1/2 Cup Canola Oil

1 Teaspoon Paprika

1/4 Teaspoon Red Pepper Flakes

2 Tablespoons Rice or Champagne Vinegar 

Pinch of Kosher Salt

Pinch of Fresh Cracked Black Pepper

Directions

Add the spring mix to a large salad bowl. Create one row of diced strawberries, one row of diced mango, a row of blueberries, row of feta, and a row of walnuts that have been roasted slightly in a dry pan (allow to cool before adding to greens). I like to create the pretty rows, especially if I’m taking the salad to a party or entertaining. I’m all about a good presentation.

Now it’s time to make the vinaigrette. Simply throw all ingredients into a mason jar, add a lid and shake. I like to make the dressing an hour or two before serving and allow to sit out. It gives all of the flavors time to marry. So much better. 

Just before serving, drizzle the vinaigrette over the top of the salad and toss. So fresh. So flavorful. My only advice, if you are service a crowd, make a lot. They will keep coming back for more!
