Searching for a quick and easy, healthy salad that will be on the table in a pinch? This strawberry spinach salad topped with store-bought rotisserie chicken and feta is absolutely scrumptious. But, don’t let the word “salad” fool you. This one is the full-meal-deal the whole family will love.
For the Salad
2 Cups Fresh Baby Spinach
5-6 Large Strawberries
1/4 Cup Feta Cheese
1/2 Cup Chopped Rotisserie Chicken Breast (skin removed)
Drizzle Balsamic Glaze
For the Dressing
1/2 Cup Olive Oil
1/4 Cup Balsamic Vinegar
1 Clove Garlic, Minced
1 Shallot, Finely Minced
1 Tablespoon Agave Nectar
1/4 Teaspoon Red Pepper Flakes
Pinch Kosher Salt
To assemble your salad, wash strawberries and slice.
Add spinach to a large bowl.
Top spinach with strawberries and feta.
Chop rotisserie chicken breast into cubes and place on top of salad.
For the dressing; add garlic, shallot, red pepper flakes, salt, agave, vinegar and olive oil to a mason jar with lid. Shake. (Tip: The dressing is more flavorful if you let it sit for 30 minutes to an hour to allow all of the ingredients to meld together.)
Drizzle a few spoonfuls of dressing over the top of the salad. Make sure to get some of the shallot and garlic, from the dressing, on the salad.
Last step, drizzle with store-bought balsamic glaze and voila!!
