Ingredients
  • 1.5 lbs sirloin steak, diced
  • 4 medium zucchini
  • 2 tbsp olive oil
  • 3 tbsp butter
  • 2 tsp minced garlic
  • 1/4 cup beef broth
  • 1 tbsp minced parsley
  • 4 sprigs fresh thyme
  • 1/2 tsp red chili pepper flakes
  • Juice of 1/2 lemon

MARINDADE

  • 1/2 cup low-sodium soy sauce
  • 2 tbsp olive oil
  • 2 tbsp sriracha
  • 1 tsp fresh cracked black pepper
  • Juice of 1 lemon

Directions

Cut steak into bite-sized cubes and set aside.

In a bowl, mix soy sauce, olive oil, sriracha, pepper, and lemon juice for the marinade. Add steak bites, ensuring thorough coating. Marinate for 15-20 minutes or overnight for richer flavor.

Heat butter and olive oil in a skillet. Drain steak bites, reserving marinade. Cook for 3-4 minutes until golden. Add reserved marinade, butter, and garlic. Simmer for 2-3 minutes, stirring for a rich coating.

Spiralize zucchini into noodles. Add noodles, beef broth, red pepper flakes, and extra lemon juice. Toss for 2-3 minutes to soften noodles. Stir in parsley and thyme. Serve immediately for a delightful, healthy feast!
