Spiced Salmon with Orange-Scallion Couscous and Roasted Asparagus

This is another full meal for you and your family to enjoy. Looks fancy, but it's super simple to make and takes no time at all. And, as an added bonus, it's healthy and delish!

Ingredients

2 Navel Orange

1 Cup Couscous

2 Scallions

Salt

Pepper

1 Cup Hot Water

1 lb Asparagus

Olive Oil

Salmon Filets

Ground Cumin

Smoked Paprika

Directions

Couscous Recipe

Squeeze juice from 1/2 navel orange into medium bowl. Add the couscous and 1 cup couscous, 2 scallions (thinly sliced) and 1/4 tsp salt. Add 1 cup hot water and let sit covered for 15 minutes. Fluff the couscous with a fork and fold in the scallions, oil, and 1/4 teaspoon each salt and pepper.

Roasted Asparagus Recipe

Heat oven to 425. Add cleaned and trimmed asparagus to cooking sheet. Toss with olive oil and salt/pepper. Broil for 10 minutes.

Salmon Recipe

Cut an orange in half. Cut half the orange into 4 wedges; set aside. Squeeze the juice of the remaining orange half and the juice of one lemon into a small bowl. Brush each side of the fish with the juice mixture, sprinkle with the seasoning and 1/4 teaspoon salt, and place on the prepared pan. Broil until opaque throughout, 1 to 2 minutes per side.

Serve with the fish and orange wedges.
