Quite simply the easiest, delicious salad you will ever make.
1 head romaine lettuce
1/4 olive oil
1/4 cup finely grated parmesan
juice of 2 lemons
salt and pepper to taste
Chop freshly washed and cold romaine lettuce into fine, bite-sized pieces. Add to a large mixing bowl.
Drizzle over olive oil. Massage oil into lettuce with your hands, making sure to evenly coat each leaf.
Squirt the juice of the lemons over the romaine, massage again.
Add parmesan, salt and pepper and mix well. Add additional cheese, salt and pepper if needed. Serve very cold.
