I have been dreaming about ceviche since we had dinner with friends at Mi Cocina. They ordered shrimp ceviche as a meal and it looked so fresh and delicious, so I decided to make it on my own. It’s very simple, loaded with flavor, and oh so good!
1 pound shrimp uncooked and chopped
1/2 cup fresh lime juice
1 cup chopped grape tomatoes
1/4 cup red onion, diced
3 Jalapeño peppers, seeded & chopped
1/4 cup cilantro, chopped
2 avocados, chopped
salt and pepper to taste
In a large bowl add the shrimp and lime juice. Let stand for 5 minutes until the shrimp turn opaque. The lime juice will cook the shrimp.
Add the tomatoes, onion, jalapeño, and cilantro and toss with the lime juice. Cover and refrigerate for an hour.
Add the chopped avocados and toss right before serving and salt and pepper to taste. Serve with tortilla chips.
