1-2, 12 oz bags of already chopped broccoli & cauliflower
1 large yellow squash, chopped
2 large zucchini, chopped
1, 8 oz package baby portobello mushrooms (not included in video, but delish!)
1 large, peeled sweet potato, chopped
8-10 small red new potatoes
8-10 small yellow new potatoes
1 large onion chopped
1/4 cup parmesan cheese

Directions
Add broccoli & cauliflower to a cookie sheet. Toss with olive oil & Montreal steak seasoning. Bake in 425° oven for 15-20 minutes. Dice sweet potatoes, fingerling potatoes, and onion. Add to a cookie sheet and toss with olive oil & Montreal steak seasoning. bake in a 425° oven for 30 to 40 minutes.
Chop squash, zucchini, and mushrooms. Add to a cookie sheet, toss with olive oil and Montreal steak seasoning. Bake in a 425° oven for 20 to 30 minutes. Yes, it’s best to roast these veggies in separate batches. If you crowd the pan, they won’t roast correctly. Once all are roasted, add to a bowl and toss together and top with shaved parmesan cheese. That’s it. Eat up!
