Sausage & Veggie Sheet Pan Dinner

Packed with hearty Italian sausages, crisp veggies, Brussels sprouts, and sweet Honeycrisp apples, this dish brings all the warmth of the season to your table. Just toss everything together and let the oven do the work—perfect for a busy weeknight or a relaxed weekend meal!

Ingredients

6 Italian sausages

1 large sweet potato

1 red onion

2 Honeycrisp apples

1 red bell pepper

1 yellow bell pepper

1 cup Brussels sprouts

3 cloves garlic

2 tbsp olive oil

1 tsp dried thyme

1 tsp dried rosemary

Salt and pepper to taste

2 tbsp fresh Italian parsley, chopped (for garnish)

Directions

Preheat your oven to 400°F (200°C).

Peel and dice the sweet potato. Slice the red onion. Core and slice the Honeycrisp

apples. Chop the red and yellow bell peppers. Halve the Brussels sprouts, and

mince the garlic.

Place all the prepared vegetables and apples on a large baking sheet.

Drizzle with olive oil, then sprinkle with thyme, rosemary, salt, and pepper. Toss

everything together until evenly coated.

Nestle the Italian sausages among the veggies.

Bake in the preheated oven for 30 minutes, or until the sausages are cooked

through and the veggies are tender.

Garnish with chopped Italian parsley before serving. Serve hot and enjoy!
