These salmon pouches are super easy to make and the perfect heart healthy meal to get your New Year started off right!
4 salmon filets
1 bushel mustard greens
1 cup cherry tomatoes, halved
1 large lemon, sliced into 6 pieces
1/4 cup olive oil
Everything But the Bagel Seasoning
Wash and clean mustard greens to remove any grit. Roughly chop.
Place 4 pieces of foil on a flat surface.
Add a pile of fresh mustard greens to the top of each foil piece.
Place salmon filet on top.
Place halved cherry tomatoes all around fish and greens.
Drizzle mixture with olive oil and sprinkle with seasoning.
Top each piece of fish with 2 lemon wedges.
Fold each salmon filet mixture up into a pouch and place in an air fryer for 25-30 minutes if fish is frozen. If thawed, 20 minutes cooking time should do the trick. When fish flakes with a fork, it's done.
Eat as is or add a side of bowtie pasta drizzled with the juice from the pouch and a sprinkle of grated parmesan cheese. So yum!
