One-Pan Greek Salad Pasta

Love Greek Salad? Then you’ll love this One-Pan Greek Salad Pasta. It’s loaded with EVERYTHING you love in a greek salad (minus the lettuce). So delish. And bonus, it all bakes in one pan and ready in about an hour!

Ingredients

4 lbs Chicken Thighs

Salt and Pepper to taste

1/2 cup olive oil

1/4 cup Apple Cider Vinegar

2 tbs Balsamic Vinegar

1, 10 oz can Artichoke Hearts

1 package Grape Tomatoes

1 medium Red Onion, sliced

5 cloves Garlic, roughly chopped

6 oz Kalamata olives, halved

6 oz green olives, halved

1/4 cup fresh oregano, chopped

1 tbs dried thyme

Juice of 2 Lemons, with zest

1 box Bowtie Pasta

Feta Cheese, for topping

Directions

Salt and pepper chicken thighs. Toss all ingredients in an extra large bowl with the chicken. Cover and marinate for at least 4 hours or overnight.  

Preheat oven to 450 F. Transfer contents of the bowl to a large baking dish. Cover and roast for 50 minutes. Uncover the pan and bake fro another 10-15 minutes.  

Serve over bowtie pasta. Top with feta cheese. Make sure to serve with the juices from the pan. Enjoy!
