Meatloaf "My Way"

Don’t knock meatloaf until you’ve tried it my way! Packed with flavor and topped with a mouthwatering sauce, this isn’t your grandma’s meatloaf. Perfect for a cozy dinner, it’s the ultimate comfort food that will leave you craving more. Give this recipe a go – your taste buds will thank you!

Ingredients

2 lbs lean ground beef

1 sweet Vidalia onion, finely minced

1 green bell pepper, finely minced + 2 rings for topping

1 pat butter

1 teaspoon Montreal Steak Seasoning

1/4 cup Italian breadcrumbs

2 eggs

2 tablespoons tomato paste

1 tablespoon Worcestershire sauce

1 tablespoon Italian parsley, chopped

1/4 teaspoon red pepper flakes

1 tablespoon garlic powder

1/2 cup ketchup, divided

1/4 cup A1 Sauce

1/4 cup BBQ sauce

Directions

Preheat your oven to 350°F (175°C).

In a skillet, melt the pat of butter over medium heat. Add the finely minced onion and bell pepper to the skillet and sauté until softened and fragrant, about 5-7 minutes. Remove from heat and allow to cool slightly.

In a large bowl, combine the ground beef, eggs, tomato paste, Worcestershire sauce, Montreal Steak Seasoning, breadcrumbs, parsley, red pepper flakes, garlic powder, the sautéed and cooled onions and bell pepper, and 1/4 cup of the ketchup. Mix gently with your hands until all ingredients are well incorporated, being careful not to overmix.

Form the mixture into a loaf in a loaf pan. Top with one to two bell pepper rings.

Place the loaf pan in the preheated oven and bake for 1 hour.

While the meatloaf is baking, mix the remaining 1/4 cup of ketchup, A1 Sauce, and BBQ sauce in a small bowl.

After 1 hour of baking, remove the meatloaf from the oven. Brush the top of the meatloaf generously with the ketchup, A1, and BBQ sauce mixture.

Turn the oven to broil and return the meatloaf to the oven. Broil until the top is bubbly and beginning to brown or blister, about 3-5 minutes.

Remove the meatloaf from the oven and let it rest for 10 minutes before slicing.
