I get so many questions about going meat-free. Or, “mostly” meat-free as I still eat fish and shrimp on occasion. Some think adopting this type of diet is simply too hard with a family. But, I’m here to tell you that it’s really not. I have found ways to adapt almost everything I cook. What do I mean by that? Well, I just make things that taste good with, or without, meat. It’s pretty simple really. It just takes a little thought.
I vow to start sharing more family friendly meals that are full of flavor, but just lack the meat. For example, I made my son a sandwich for lunch. I was in a rush, so I thought I’d make myself one too. His had meat. Mine was all veg. Easy. Just took a little digging through the fridge and some chopping.
Around here, we like a good ‘ole @JerseyMikes sandwich. I can mimic them pretty close at home. Gray had the meat version. I didn’t. The secret in my opinion is all of that yummy oil & vinegar and herbs. I promise you won’t miss the meat.
So, here’s my challenge. If you’ve been wanting to try a meatless, or mostly meatless diet, start out small. Maybe cook one meal a week for the fam that doesn’t include meat. Before you know it, you’ll realize that it’s not as hard as you think. And overtime, you won’t miss it at all! #Goals
Slice hoagie lengthwise and then in half. (Or, eat the whole dang thing. It’s a free country!) Open roll and spread red pepper hummus (or any hummus you prefer) on both sides. Layer all veggies and cheese on one side. Drizzle oil & vinegar over both sides to cover veggies and saturate bread slightly. Sprinkle with salt, pepper and herbs. Add top and enjoy!
