I made the most scrumptious salad for dinner last night. I just had to share. This Italian Chopped Salad eats more like a meal. Everyone will leave satisfied and wanting it for lunch the next day. So good!
For The Salad
1 head of romaine lettuce, washed and roughly chopped
1/3 cup chopped pepperoncini, sliced
4 oz fresh, buffalo mozzarella, roughly torn
½ cup chickpeas drained and rinsed
2 oz salami, thinly sliced
1 cup cherry tomatoes, halved
1 baby cucumber, thinly sliced
1 shallot or 1/2 red onion, thinly sliced
1 chicken breast, dry rubbed with your rub of choice, grilled, chopped
For the Italian Dijon Dressing
1/4 cup olive oil
1 tablespoon sherry vinegar
1 tablespoon dijon mustard
1 teaspoon dried oregano
½ teaspoon pepperoncini juice
1/4 teaspoon chili flakes
salt and pepper to taste
Add all salad ingredients to a large bowl. Set aside.
In a separate bowl, mix all dressing ingredients together in a mason jar. Top with lid and shake to make sure mixture is emulsified.
Dress your salad with salad dressing, toss and serve!
