Impossible Lettuce Wraps

Meatless Monday is always a hit with the Impossible Lettuce Wraps. My whole family loves them and I promise, they will never taste the difference.

Ingredients

INGREDIENTS FOR THE WRAPS:

6-8 Romaine Lettuce or Butter Lettuce Cups

1, 12 oz package of Impossible Burger

1-2 Tablespoons Montreal Steak Seasoning

1 Tablespoon Olive Oil

1 Sweet Onion

1 Cup Slivered Carrots

1/4 Cup Shredded Monterey Jack Cheese or Queso Fresco

1/4 Cup Fresh Cilantro Leaves

“Homemade” Ranch Dressing (recipe follows)

"HOMEMADE RANCH INGREDIENTS:

1 Cup Mayo

1 Cup Buttermilk

1 Hidden Valley Ranch Buttermilk Ranch Packet

DIRECTIONS FOR THE WRAPS:

Form Impossible Burger into patties and season with Montreal Steak Seasoning. Or, you can cook the burger in a skillet to a ground hamburger meat consistency. If you are going this route, add 1 tablespoon of olive oil to a pan. Add one whole, dice sweet onion. Sauté until translucent. Add the Impossible Burger and Montreal Steak Seasoning. Sautés together until burger is done and slightly crispy. If you are grilling the Impossible, cook the onions in a pan by themselves. When meat and onions are done, set aside. If you grilled the patties, crumble before adding to your lettuce wrap.

To assemble, crumble the meat into a lettuce cup. Top with a few slivered carrots, shredded cheese and a sprinkle of fresh cilantro. Top with a drizzle of “homemade” ranch Dressing.

DIRECTIONS FOR THE DRESSING:

Add all dressing ingredients to a large mason jar. Shake well. Serve.
