Healthy Turkey Tacos

Ground turkey is a healthier alternative to your Taco Tuesday. But, this recipe certainly doesn't lack in flavor, just because it's on the healthier side. Serve your tacos in a lettuce cup for an even healthier option. Enjoy!

Ingredients

1-2 lbs 93% Lean Ground Turkey

1 Sweet Yellow Onion, diced

2 tablespoons Olive Oil

Salt and freshly ground Black Pepper

3 cloves Minced Garlic

1-2 packages of La Tiara Taco Seasoning (found at Reasor's in the Mexican aisle)

2 cans San Marcos Chipotle Peppers in Adobo Sauce

1/2 cup Ex Fenix Salsa (my favorite, but any kind of salsa will do)

1 package Fancy Shredded Mexican Style Cheese or grate your own Extra Sharp Cheddar Cheese

1 bunch of Romaine Lettuce or Corn Tortillas

1 container Grape Tomatoes

1 bunch Cilantro, chopped

1 bunch Green Onions, diced

1 Avocado, diced

1 Lime

1 can Kuner's Southwest Black Beans with Jalapeño and Lime (regular black beans are fine too)

Directions

For the Taco Meat:

Heat oil in a large pan or cast iron skillet. Add diced onion and sauté until translucent and starting to brown slightly. Add minced garlic to onions and sauté for 1-2 minutes.

Add ground turkey to pan, using spatula break turkey into pieces. Continue to break up until almost cooked through. Add 1-2 packages of taco seasoning and continue to cook through.

Remove 1-2 tablespoons of the adobo sauce from the can of Chipotle Peppers in Adobo and stir in to the ground turkey mixture. This will give your turkey meat a smokey flavor and a little kick. If you like it extra spicy, purée or mash one of the peppers up and toss into the ground meat mixture.

Add in the salsa, stir to combine. Remove from heat and set aside.

Taco Assembly:

If you are wanting a healthier way to eat your tacos, take several ribs of romaine lettuce; wash and pat dry. These will be the boats for your filling. Note: You can use soft corn tortillas or crispy taco shells for this recipe as well. Or flour. However, the lettuce cups are the healthier alternative.

Shred the entire block of cheese. I prefer to shred my own cheese. But, you can also use packaged, pre-shredded cheese for this recipe.

Dice your grape tomatoes in the quarters.

Dice your green onions and chop the cilantro leaves.

Take one lettuce cup or taco shell and add taco meat mixture.

Add shredded lettuce of you are using a corn tortilla or taco shell.

Top with cheese, tomatoes, cilantro and green onions.

Add a bit of salsa to the top.

Serve with a side of black beans.
