My daughter and I were back in the kitchen again this week. We made some healthier cookies to satisfy our sweet tooth. These were made with chickpeas and dates, but no one will ever know. It will be our little secret. 🤫
1 can rinsed and drained chickpeas
5 pitted dates (any kind work)
1/2 cup peanut butter
1/4 cup agave or pure maple syrup
1/4 cup unsweet cocoa powder
1/4 cup rolled oats
1 tsp vanilla extract
1/2 tsp baking soda
1/2 tsp baking powder
1/2 cup semi sweet chocolate chips + some to top
Pinch of flaky seat salt to top
Preheat oven to 350 degrees.
Add all ingredients (except for a few reserved chocolate chips and the sea salt) to a food processor and blend. Scoop out mixture. Roll 8-10 fairly large balls of dough and place on a parchment-lined cookie sheet. Wet hands and smoosh dough balls slightly. Place in oven for approximately 14 minutes. (Cookies will have more of a brownie-like texture.) Allow to cool slightly and serve warm with a scoop of vanilla ice cream.
