Grown Up Grilled Cheese

Who doesn’t love a good grilled cheese? My GROWN UP version takes the traditional recipe and kicks it up a notch. In my opinion, it’s the Everything But The Bagel Sesame Seasoning from Trader Joe's that makes it special. You can make this with meat (bacon). Or without.


Ingredients

MEAT VERSION

2 Slices of Sourdough Bread

2 Slices of Bacon

Hatch Green Chile (Canned or Roasted Fresh)

2 Slices of Chipotle Cheddar Cheese

2 Slice of Sharp Cheddar Cheese

Softened Butter

Sprinkle of Everything But the Bagel Sesame Seasoning

VEGETARIAN VERSION

2 Slices Sourdough Bread

1 Heirloom Tomato

Kosher Salt

4 Large Fresh Basil Leaves

2 Slices Swiss Cheese

Softened Butter

Sprinkle of Everything But the Bagel Sesame Seasoning


Directions

MEAT VERSION

Spread butter on one side of each slice of bread. Lay one of the buttered bread slices, buttered side down, on griddle. Top with Chipotle Cheddar Cheese, bacon, and hatch chile. Cover all with sharp cheddar cheeses. Place last slice of bread on top. Buttered side up. Grill each side until golden brown.

VEGETARIAN VERSION

Slice tomato and place on paper towels. Sprinkle with salt to draw out the water. 

Wash and pat dry basil leaves. 

Spread butter on one side of each slice of bread. Lay one of the buttered bread slices, buttered side down, on griddle. Top with Swiss Cheese, tomato slices, and basil. Place last slice of bread on top. Buttered side up. Grill each side until golden brown.
