Looking for a way to use those sweet Summertime peaches? Try my Grilled Peach & Burrata Appetizer on for size. Perfect for a slow Friday evening at home.
1-2 Fresh Peaches (or more depending on your guest list)
1-2 Teaspoons Olive Oil
1-4 Slices of Sourdough Bread (or more depending on your guest list)
1-2 Balls of Burrata
Pinch of Kosher Salt
Drizzle of Mike’s Hot Honey (or any honey you choose)
2 Tablespoons Chopped Pistachios
Sprinkle of French Sea Salt
Drizzle of Balsamic Glaze
Slice peaches, skin on. Add to a hot grill pan. Drizzle peach lightly with olive oil (you could use a brush to baste each one if you wish). Sprinkle with kosher salt. Grill on both sides until grill marks are achieved, careful not to over cook (they’ll get mushy). Remove and add to serving platter.
Brush both sides of sourdough with olive oil. Add to the same grill pan and toast on both sides until grill marks are achieved. Slice in half and add to serving platter.
Split Burrata in half and leave exposed. Top grilled peaches and Burrata with a drizzle of honey, pistachios, drizzle of balsamic glaze, and finish with french sea salt.
Spread Burrata mixture on a slice of bread, top with peaches and enjoy. So. Damn. Good!
