Last Sunday, I made a Grilled Broccoli & Romaine Salad that was super yum. I thought I’d share the recipe. Enjoy!
FOR THE DRESSING:
3 cloves of garlic, finely minced
1/4 cup fresh lime juice (lemon juice works too)
4 tsp Worcestershire
1 tbsp dijon
1/2 cup tahini
2-4 tbsp water plus more if needed
Black pepper to taste
FOR THE SALAD:
2 heads of broccoli, sliced in half
2 hearts of romaine, sliced lengthwise with top 2-3 inches trimmed
4 pieces of sourdough bread
2 limes, sliced in half
Olive oil, to taste
1 tsp garlic powder
Kosher salt
Fresh cracked black pepper
FOR THE DRESSING:
Whisk together the garlic, juice, dijon and Worcestershire. Add tahini and whisk until combined. Add 2 tbsp of water to loosen it up and whisk. If the dressing is still too thick, add 2 more tbsp. Add pepper to taste and adjust seasoning if needed!
FOR THE SALAD:
Preheat the grill on high. Set all burners to direct heat. Generously season the broccoli and romaine with olive oil, salt, pepper and lime juice. Drizzle olive oil on the bread and season with salt, pepper & garlic powder.
Grill the broccoli for 7 minutes with the lid closed. Flip, then grill for 3-4 minutes. If needed, remove any smaller pieces that cook quicker than others.
Add romaine, flat side down to the grill. Cook 2 minutes. Remove the broccoli. Flip the romaine. Add the lime sliced (flat side down) and the bread. Grill 2 minutes. Remove lettuce. Flip bread and toast on the other side. Remove lime and bread and plate everything.
Enjoy ASAP with generous amounts of tahini dressing! It’s the perfect Summer salad. Yum!
