Green Thai Curry Salmon

Tender salmon in rich green curry sauce, served with steamed broccolini and a baked sweet potato topped with Greek yogurt. Packed with omega-3s, vitamins, and antioxidants, it's perfect for a wholesome family dinner!

Ingredients

4 salmon planks

1-1/2 red onion, divided

1 tablespoon olive oil

6 garlic cloves

1 inch fresh ginger, peeled

1/2 jar Green Thai Curry Paste

1 can full-fat coconut milk

1 tablespoon organic tamari

Directions

In a blender like a Nutribullet, add 1/2 onion, garlic, ginger, curry paste, coconut milk, and tamari. Blend until smooth.

In a pan, add olive oil and one red onion, sliced thin. Sauté until onion is caramelized.

Add curry mixture to the onions in the pan. Simmer until bubbling.

Nestle salmon planks into the coconut curry mixture. Spoon sauce over salmon, cover with a lid, and simmer on low until salmon is cooked through. 10-12 minutes.

Serve with steamed or roasted broccolini and a baked sweet potato topped with a dollop of Greek yogurt.
