Sometimes the simplest recipes are the best recipes. The Greek Chicken Bites are super quick and easy to throw together. Perfect to throw in a lunchbox, on top of a salad, over pasta, dipped in hummus…the options are literally endless! A must try!
1 lb. chicken breasts cut into 1" pieces (about 2 breasts)
2 tablespoons olive oil
Juice and zest of 1 lemon (about 2 tablespoons juice and 1 teaspoon zest)
2 cloves garlic minced (about 1 teaspoon)
2 teaspoons dried oregano
1 teaspoon kosher salt
1/2 teaspoon fresh cracked black pepper
Make the marinade by mixing the olive oil, lemon juice and zest, minced garlic, dried oregano, kosher salt, and black pepper together in a small bowl or glass measuring cup.
Put the cut up chicken breasts in a plastic bag. Pour marinade over chicken and stir to coat. Allow to marinate for 20 minutes, but preferably for 2-24 hours. In a hurry, marinading is not necessary, but does make it more flavorful. If no time to marinade, simply throw the marinade ingredients in a pan with the chicken and sauce until chicken is golden.
Heat a large heavy skillet over medium-high heat until very hot.
Add chicken to the skillet and spread out in an even layer. Cook without disturbing for about 5 minutes. Then, flip and cook on the other side for about 5 more minute, or until chicken is completely cooked.
Allow to rest and enjoy.
