Fire Roasted Corn and Cheese Quesadillas

I went to a wedding reception years ago. The reception was a Mexican food theme. They served these fire roasted quesadillas as appetizers. My husband and I fell in love with them. They are so simple, but SUPER delicious!

Ingredients

12 Corn Tortillas

8 oz Fresh Grated Monterrey Jack Cheese

1 Bag of Frozen, Fire Roasted Corn (thawed)

Butter

Directions

Using a griddle or cast iron skillet, add small amount of butter to service. Enough to evenly cover.

Place one corn tortilla down. Add generous amount of cheese on top of tortilla. Sprinkle with fire roasted corn. Add another corn tortilla on top.

Grill and flip midway until both sides are toasty and slightly brown.

Once cheese is melty, take off the griddle. Allow to set for a couple of minutes and cut into triangles.

Serve as an appetizer on your next Mexican night or eat as a meal. Easy and oh so delicious! The kids love it too!
