Crispy Crockpot Chicken Carnitas with “Homemade” Tortillas

Busy week? This is your go-to meal to have dinner on the table in a snap after a long day. And oh so delish!

Ingredients

6-8 Boneless, Skinless Chicken Breasts

1 Can of Diced Pineapple (with juice)

1.5 Packages of La Tiara Taco Seasoning (or any taco seasoning you prefer)

10-12 Sweet Mini Peppers

1/4 Cup of Jarred Sweet Jalapeños (I used Trappy’s) + 1/4 of the jalapeño juice from the jar

1 Tablespoon Jarred, Minced Garlic
1/2 Cup Diced Green Onions or 1 Sweet Yellow Onion (Diced)

Chili Oil or Olive Oil

Raw or Uncooked Flour Tortillas

Directions

Throw the raw chicken, pineapple + juice, taco seasoning, mini peppers, jalapeño + juice, garlic, and onions into a crockpot in the morning. Cook on low for 6-8 hours.

When you get home, preheat your oven to broil. And take out your griddle pan or skillet and preheat it on medium high.

Take two forks and shred the chicken into large chunks, inside your crockpot. Fish chicken out of the pot with a slotted spoon, draining as much of the juice as possible. Add to a sheet pan. Fish out some of the pineapples, onions, and peppers and add those to the sheet pan as well.

Give the entire pan a good drizzle with chili oil (olive oil works fine here too). Put the sheet pan in the oven on broil and watch closely. When chicken and peppers start to char slightly, it’s ready. Take out and set aside. 

While chicken is broiling, start adding your uncooked flour tortillas to the hot griddle. No spray or oil needed. Simply throw them down and wait for bubbles to form. When you see the bubbles, flip and do the same thing on the other side. The tortillas are better when they are just cooked. Try not to over cook or they become crunchy and not soft and pliable. 

To assemble, take a “homemade” tortilla, add the crispy chicken, top with cheese, lettuce, tomatoes, fresh avocado, salsa…whatever you prefer. Serve with a side of black beans and dinner is served. 

HINT: Make a ton of extra tortillas! Just trust me.
