If you live in Tulsa, Oklahoma, you've most likely visited the iconic restaurant, Celebrity Restaurant. It opened in 1963. It has a very nostalgic feel with it's red velvet, high-backed booths and swanky atmosphere. You almost feel as if Frank Sinatra or Elvis might make an appearance at any time. LOVE this place. The food is excellent, but the table side caesar salad is probably what they are most known for. It's SO GOOD!
I have watched them make the famous dressing to this salad so many times that I can now make it by heart. If you love caesar salad as much as my family does, this is a MUST TRY!
1 tsp. salt
1 lg. clove fresh garlic
1 tsp. prepared mustard
Juice from 1 lemon
1/4 c. salad oil
2 anchovies, mashed to a paste
1 raw egg, beaten well
2 tsp. Worcestershire sauce
1 head Romaine lettuce, torn in bite size pieces
Plain croutons
Parmesan cheese
Crush garlic in large salad bowl. Add salt, mustard, lemon juice, anchovy paste and Worcestershire sauce. Mix well. Add 1/4 cup salad oil and mix again. Add beaten egg and mix well. Put lettuce pieces in bowl and 1/4 cup Parmesan cheese. Toss with dressing. Put croutons on top and toss one more time. Serve immediately with fresh black pepper and Parmesan cheese.
