Caramelized Onion & Greek Chicken Roll-Ups

These Caramelized Onion and Greek Chicken Roll Ups are so simple, but packed with so much flavor! The perfect accompaniment to a zesty Greek Salad and homemade hummus.

Ingredients

1 Package of Low Carb, Whole Wheat Burrito Size Tortillas (or any tortilla you prefer)

1-2 Large Red Onions

Kosher Salt

Olive Oil Spray

3-4 Skinless Boneless Chicken Breasts

Salt Sisters Mediterranean Seasoning

Feta Cheese

Directions

Season chicken breasts on both sides with Mediterranean Seasoning and grill until done. After grilling, allow to rest for 10 minutes under a foil tent. Slice in thin strips.

Using a mandolin, slice red onion thin. Add to a hot skilled with a small amount of olive oil and cook until caramelized and looking golden. Season lightly with kosher salt while cooking.

Once chicken and onions are cooked, lay your tortilla flat. Sprinkle Feta Cheese, right down the middle of the tortilla.

Next add a good helping of the caramelized onions on top of the feta, right down the middle of the tortilla.

Top that with the chicken.

Roll tortilla around the ingredients into a long tube.

Place filled tortilla, seam side down in a hot skilled sprayed with olive oil.

Brown slightly on all sides and long enough to felt the feta inside.

Remove from heat and allow to cool for 1-2 minutes. Slice in half and enjoy with a greek salad and homemade hummus. Be sure to check out my homemade Greek dressing here.
