Buddha Bowls

Salad

Buddha Bowls are always a crowd pleaser at my house. Think Genghis Grill, but at home. I chop all sorts of fresh veggies, protein, rice, etc and make a homemade Asian vinaigrette to serve on top. Everyone puts what they want in their bowl to make it their own. The best part? Everyone leaves happy! This is the perfect meal for those picky eaters.

Ingredients

BOWL INGREDIENT SUGGESTIONS

Jasmine Rice

Romaine Lettuce (Chopped)

Kale (Chopped)

Steamed Broccoli

Sautéed Zucchini & Squash

Cherry Tomatoes (Cut in half)

Red & Yellow Bell Pepper (Chopped)

Slivered Carrots

Shelled Edamame

Cucumber (Diced)

Diced Jalapeno

Avocado

Cilantro

Lemon Wedges

Air Fryer Tofu (Recipe Follows)

Marinated & Grilled Chicken Tenders


AIR FRYER TOFU INGREDIENTS

1 lb Block ofExtra Firm Tofu

1/2 Tablespoon of Light Soy Sauce or  Liquid Aminos

1 Teaspoon Garlic Powder

1/2 Teaspoon Onion Powder

1 Teaspoon Paprika

1/2 Teaspoon Sea Salt

2 Teaspoons Cornstarch


DRESSING INGREDIENTS

1/4 Cup Soy Sauce or Liquid Aminos

1/4 Cup Sesame Oil

1/4 Cup Olive Oil

1/4 Cup Rice Vinegar

1/4 Teaspoon Crushed Red Pepper Flakes

1/4 Teaspoon Ground Ginger

1 Teaspoon Everything But the Bagel Seasoning

Avocado Pit (for mixing)

Directions

AIR FRYER TOFU DIRECTIONS

In a medium size bowl place the pressed and cubed tofu. Add in liquid aminos and toss to coat. Add in all of the other seasoning ingredients and toss to thoroughly combine.

Place in your air fryer in a single row, so that all the tofu has a little bit of space around each piece. Set your air fryer to 400°F. Cook for 10 minutes, shaking the basket after 5 minutes, then continuing to cook until crispy. 

Remove after tofu is cooked. Allow to cool for a few minutes then serve. Enjoy!

DRESSING INSTRUCTIONS

Remove pit from avocado. Add to a jar. (This is not necessary, but I find it helps things mix well.)

Add all remaining ingredients to the jar. Screw on lid and shake. Done!

BUILD YOUR BOWL

I like to chop all ingredients and add to separate bowls and place in an assembly line. Allow diners to go down the line and put whatever ingredients they want in their individual Buddha bowl. Top with dressing and enjoy! Healthy and delish!
