BBQ Chicken Nachos

When your sort of sick teenage boy requests BBQ Chicken Nachos for lunch, mama makes the nachos. 😆 Looking for a super simple throw-together lunch or dinner idea for the kids? This one is a piece of cake!

Ingredients
  • Leftover Grilled Chicken Breast
  • Any kind of BBQ Sauce
  • @Tostitos Scoops
  • Shredded Cheddar Cheese
  • Ranch Dressing (Optional)
  • Green Onions (Optional)
  • Jalapeno Slices (Optional)
Directions
  1. Cut up leftover grilled chicken breast into small pieces. Add to a bowl. Toss chicken with your favorite BBQ sauce. Set aside.
  2. Add @Tostitos Scoops to a pan, top with BBQ chicken pieces and shredded cheese. DOn’t skimp on the cheese.
  3. Toast in the oven on 450 for 6-8 minutes or until cheese is bubbly and chicken is heated through. If it were me, I would have added a drizzle of homemade ranch dressing to the top of the nachos, thrown on some sliced green onions and jalapeños, and call it good. But, not everybody likes that. Including my teenage boy.
