Baked Potato Bar

Some nights, I like to make dinner simple. Nothing is more simple than a classic Baked Potato Bar with a side Caesar Salad. For the bar, I like to put out potatoes and lots of sides for my family to choose from. It's fun to go through the line and load your potato up with all of your favorites. I also like to serve the potatoes with a yummy Caesar Salad. There's a local restaurant in Tulsa called The Celebrity Restaurant (it's an icon!) who makes THE BEST table side caesar salad around. I've watched them make it enough that I can replicate it.

Ingredients

Baked Potatoes

Foil

Olive Oil

Kosher Salt

Shredded Cheddar Cheese

Sour Cream

Bacon

Green Onions

Butter

Directions

For the baked potatoes, I wash and scrub my potatoes, pat them dry and poke holes all the way around. I place each potato on a piece of aluminum foil (enough to cover the potato when wrapped), pour olive oil over the potato and sprinkle with kosher salt. Then I wrap the potato in the foil, and continue with remaining potatoes. I then place the foil-wrapped potatoes on a cookie sheet in a 425 degree oven and bake for 1 hour.

While the potatoes are cooking, I cut up the green onions, shred the cheese (I prefer cheddar), and set out my butter to soften.

I also prefer to use microwavable bacon for the bacon bits. It cooks fast and gets super crispy. I crumble that and add to a small bowl.

That's it. Your family simply goes through the line and adds all of their desired toppings. You can also get creative with your toppings. Chili and steamed broccoli are also create choices for toppers. Enjoy!
