I love making pretty salads. I also think salad should be fun to eat. Bonus, right? This simple Baby Romaine Salad with Homemade Lemon Viniagrette and Shaved Parmesan is a family favorite. We loving picking up the tiny spears with our fingers and enjoying each lemony, crispy bite. Try something different tonight and spice things up! π₯¬ππΆ
2 Heads of Baby Romaine (I get mine at @costco)
1 Small Block of Parmesan Cheese
1/4 Cup Olive Oil
Juice and Zest of one Lemon
1 Teaspoon Champagne Vinegar (Citrus Vinegar is great too!)
1 Clove Garlic, Minced
1/4 Teaspoon Red Pepper Flakes
1/4 Teaspoon Herbs de Provence
1/4 Teaspoon Kosher Salt
Few Cranks of Fresh, Cracked Black Pepper
Wash your two heads of baby romaine really well. Cut of the stem of each and spread on to a pretty platter.
For the Lemon Vinaigrette, mix the oil, lemon zest/juice, vinegar, garlic, red pepper flakes, Herbs de Provence, salt and pepper in a small mason jar. Add lid and give it a good shake. Pro Tip: Allow to sit for a minimum of 1 hour before serving to let the flavors marry.
Pour some of the vinaigrette over the baby romaine. Shave lots of the parmesan block over the romaine and dressing. I use a potato peeler for the shaving.
Serve salad really cold. Super yum! π
