4 oz vermicelli or rice noodles
8 large rice paper wrappers
1 head red leaf lettuce
1 pkg shredded carrots
1 English cucumber, julienned
1 lb boiled shrimp
1 jalapeño, sliced
1 mango, sliced
1 avocado, sliced
1 pkg Scissortail Italian basil
1 pkg Scissortail fresh mint
1 bushel fresh cilantro leaves
1 bushel of fresh cilantro, leaves only
Peanut Sauce
1/2 cup creamy natural peanut butter
2 tbsp fresh lime juice
2 tbsp rice vinegar
1 tbsp sriracha
1 tbsp tamari
1 tbsp toasted sesame oil
2 tsp maple syrup
1 tsp grated fresh ginger
4 to 6 tbsp water
Cook noodles according to package instructions. Drain and rinse under cold water.
Fill a large pot or bowl with warm water. Dip a rice paper wrapper into the water for 15 seconds until pliable. Lay it flat on a glass plate.
In the center, arrange noodles, lettuce, carrot, cucumber, shrimp, jalapeño, mango, avocado, basil, mint, and cilantro. Fold sides over the fillings and roll tightly. Repeat with remaining wrappers.
For the Peanut Sauce, combine peanut butter, lime juice, rice vinegar, sriracha, tamari, sesame oil, maple syrup, ginger, and water until desired consistency.
