This is one of those salads you will want to make again and again. And, you’ll feel good about because you’re eating the rainbow. Loaded with tons of veg and the most flavorful peanut dressing. It’s an all-time household favorite.
SALAD INGREDIENTS
1, 20 oz bag of chopped mixed green & red cabbage w/ slivered carrots. (Note: I add extra shredded green cabbage and extra slivered carrots)
6 oz spring mix
4 oz chopped cilantro
2 mango, peeled & chopped
2, red bell pepper, sliced thin
1/4 cup chopped cashews
6 oz cherry or grape tomatoes, halved
1 bunch baby chives, chopped
1 rotisserie chicken, skin removed and shredded
PEANUT DRESSING INGREDIENTS
3 tablespoons soy sauce
1/4 cup natural creamy peanut butter
3 tablespoons rice wine vinegar
3 tablespoons sesame oil
2 teaspoons Trader Joe’s Chili Onion Crunch
1 tablespoon sesame seeds
1/4 teaspoon black pepper
2 tablespoons water (more if you want a thinner consistency)
Chop all salad ingredients and add individual portions to a large mixing bowl.
Add all dressing ingredients to a small mixing bowl and whisk together.
Pour dressing over salad ingredient. Toss to combine and enjoy!
