Air Fryer Salmon

Ingredients
  • 4 Salmon Filets
  • Foil
  • Kosher Salt
  • Fresh Cracked Black Pepper
  • 3 Lemons (Zest & Slices)
  • Sliced Onion
  • Grape or Cherry Tomatoes
  • Olive Oil
  • Fresh Dill
Directions
  1. Rinse salmon filets and place on a paper towel. Pat dry. Lay 4 sheets of aluminum foil out.
  2. Zest all three lemons and set aside. Slice lemons in to wheels. Lay 2 lemon slices on the bottom of each foil piece. Slice onion into thin slices and place on top of lemon slices on each piece of foil.
  3. Place salmon filets on top of each lemon/onion pile. Season with salt and pepper. Top with two more lemon slices per filet and more onion.
  4. Throw on a few grape or cherry tomatoes. Top with a fresh dill spring and drizzle with olive oil. Continue with all filets. Wrap filets in foil pouches.
  5. Put foil packets into an air fryer. Turn heat to “Fish” mode or on 400 for 12-15 minutes. Check for desired doneness.
  6. When finished cooking, open pouches and pull filet out with tomato and onion. Serve with rice or herb-roasted potatoes. Or, any side you prefer. Enjoy!
