Air Fryer Eggplant Parmesan

Searching for a great, healthy Italian recipe? My air fryer eggplant tastes just as good as the fried version. And, it’s vegetarian too! You’ll never miss the calories!

Ingredients
  • 1 Large Eggplant
  • 4 Eggs
  • 1/2 Cup Whole Wheat Bread Crumbs
  • 1/2 Cup Italian Bread Crumbs
  • 1/2 Cup Panko Bread Crumbs
  • 1 Tsp Salt
  • Black Pepper
  • 1/4 Tsp Cayenne
  • Jarred Marinara Sauce
  • Log of Fresh Mozzarella
Directions
  1. Cut eggplant in 1/4 inch thick slices. (A microplane makes this really simple.)
  2. Combine all dry ingredients in a bowl. Whisk eggs in separate bowl. Dredge eggplant slice in egg wash, switch and dredge in breadcrumb mixture. Go back to egg mixture. Then end with the dry. Place on a cookie sheet while you finish the batch. Spray tops with olive oil if you desire a golden crispy finish. But not necessary.
  3. Put 2-3 slices of the breaded eggplant in the air fryer on 360° for 3 minutes each side. When golden brown, remove and place back on cookie sheet. Top with marinara and fresh mozzarella. Put in oven on broil until cheese is melted and starting to bubble. Remove and allow to set for 5 minutes.
  4. Serve with a small green salad with lemon vinaigrette and angel hair pasta topped with marinara. Enjoy!
